Instructions
1- Prepare the Vegetables:
- Cut the baby potatoes in half and the carrots into large chunks.
- Place them in a pot filled with cold water, ensuring the water covers the potatoes and carrots. Add 1 tablespoon salt and 1 tablespoon baking soda.
- Boil for 15-20 minutes until slightly tender.
2- Preheat the Oven:
- Set your oven to 400°F (200°C).
3- Season and Toss:
- Drain the cooked potatoes and carrots, then transfer them to a large bowl.
- Drizzle with 1/2 cup olive oil, and season with 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon paprika. Toss well to coat evenly.
