Ingredients
🍗 2 chicken breasts, cut into cubes
🧅 1 medium-sized onion, chopped
🌶️ 1/2 green bell pepper, chopped
🌶️ 1/2 red bell pepper, chopped
🧄 2 cloves of garlic, chopped
🌿 Cilantro, as much as desired, roughly chopped
🥔 3 potatoes, cubed
🥄 1 tablespoon chicken bouillon
🌿 1 packet of Sazón
🌶️ 1 teaspoon cumin
🧂 1/2 teaspoon black pepper
🧂 1 teaspoon salt
🛢️ 1 tablespoon oil
💧 2 cups of water
Instructions
1- Prepare the Chicken:
- Add oil to the pressure cooker and heat it up.
- Add the cubed chicken breasts to the cooker, sprinkle with a little salt, and pour in 1 cup of water.
- Secure the lid of the pressure cooker. Set it to the 'chicken' setting and reduce the time to 25 minutes.
- Once done, press cancel and perform a quick release to let out the pressure.
2- Add Vegetables and Spices:
- Open the pressure cooker and add the chopped onion, garlic, green and red bell peppers, cilantro, and cubed potatoes.
- Stir in the chicken bouillon, Sazón, cumin, black pepper, salt, and an additional cup of water.
3- Finalize Cooking:
- Secure the pressure cooker lid again and set it to pressure cook for another 10 minutes.
- Once the cycle is complete, press cancel and do another quick release.
4- Serve:
- Carefully open the lid, give the stew a good mix, and taste for seasoning adjustments.
- Serve hot, garnished with extra cilantro if desired.
