These homemade chicken burritos are a family favorite, featuring tender chicken, zesty cilantro lime rice, and flavorful black beans. Ingredients
For the Chicken:
๐ 2 large chicken breasts
๐ฎ 2 packets of taco seasoning
๐ซ 2 tablespoons of oil
๐ง 1/2 cup of water
For the Rice:
๐ 2 cups of basmati rice, washed and soaked for 30 minutes
๐ซ 2 tablespoons of oil
๐ง 3 cups of hot water
๐ 1 tablespoon of chicken bouillon
๐ง 1 tablespoon of salt
๐ Juice of 2 limes
๐ฟ 1/2 cup of cilantro, chopped
For the Black Beans:

๐ง 1 large clove of garlic, minced

1 small onion, chopped
๐ฅซ 1 can of black beans
๐ 1/2 teaspoon of chicken bouillon
Toppings (optional):
๐ฅ Guacamole

Pico de gallo
๐ง Cheese (shredded)
๐ฅ Sour cream
๐ง Queso
๐ถ๏ธ Hot sauce
Instructions
1- Prepare the Chicken:
- Cut the chicken breasts into small pieces.
- Heat 2 tablespoons of oil in a large skillet over medium heat.
- Add the chicken and cook for about 5 minutes until slightly browned.
- Add the taco seasoning and 1/2 cup of water, and stir to combine.
- Let it cook for another 5 to 10 minutes until the chicken is fully cooked through. Set aside.
2- Prepare the Rice:
- In a pot over high heat, add 2 tablespoons of oil.
- Add the soaked rice, stirring frequently for about 2 minutes.
- Add the salt, chicken bouillon, and 3 cups of hot water. Stir well.
- Cover and cook on medium heat until the water is absorbed.
- Reduce the heat to low, place a paper towel over the rice, cover again, and let it steam for 10 minutes.
- Remove from heat and allow it to cool slightly before adding lime juice and cilantro. Mix well and set aside.
3- Prepare the Black Beans:
- In a small pot, heat 1 tablespoon of oil over medium heat.
- Add minced garlic and chopped onion, sautรฉ for about 1-2 minutes until fragrant.
- Stir in the black beans and 1/2 teaspoon of chicken bouillon.
- Simmer for about 5 minutes, then remove from heat.
4- Assemble the Burritos:
- Lay out all cooked items and toppings on a table.
- Place a large flour tortilla on a plate.
- Add chicken, cilantro lime rice, and black beans onto the tortilla.
- Top with your choice of guacamole, pico de gallo, cheese, sour cream, queso, and hot sauce.
- Roll the tortilla into a burrito and enjoy!
