These homemade chicken burritos are a family favorite, featuring tender chicken, zesty cilantro lime rice, and flavorful black beans. Perfect for a quick weeknight dinner, this customizable dish allows everyone to build their own burrito just the way they like it. Ingredients

For the Chicken:
๐Ÿ— 2 large chicken breasts
๐ŸŒฎ 2 packets of taco seasoning
๐Ÿซ’ 2 tablespoons of oil
๐Ÿ’ง 1/2 cup of water

For the Rice:
๐Ÿš 2 cups of basmati rice, washed and soaked for 30 minutes
๐Ÿซ’ 2 tablespoons of oil
๐Ÿ’ง 3 cups of hot water
๐Ÿ“ 1 tablespoon of chicken bouillon
๐Ÿง‚ 1 tablespoon of salt
๐Ÿˆ Juice of 2 limes
๐ŸŒฟ 1/2 cup of cilantro, chopped

For the Black Beans:
๐Ÿซ˜ 1 tablespoon of oil
๐Ÿง„ 1 large clove of garlic, minced
๐Ÿง… 1 small onion, chopped
๐Ÿฅซ 1 can of black beans
๐Ÿ“ 1/2 teaspoon of chicken bouillon

Toppings (optional):
๐Ÿฅ‘ Guacamole
๐Ÿ… Pico de gallo
๐Ÿง€ Cheese (shredded)
๐Ÿฅ› Sour cream
๐Ÿง€ Queso
๐ŸŒถ๏ธ Hot sauce


Instructions

1- Prepare the Chicken:

  • Cut the chicken breasts into small pieces.
  • Heat 2 tablespoons of oil in a large skillet over medium heat.
  • Add the chicken and cook for about 5 minutes until slightly browned.
  • Add the taco seasoning and 1/2 cup of water, and stir to combine.
  • Let it cook for another 5 to 10 minutes until the chicken is fully cooked through. Set aside.

2- Prepare the Rice:

  • In a pot over high heat, add 2 tablespoons of oil.
  • Add the soaked rice, stirring frequently for about 2 minutes.
  • Add the salt, chicken bouillon, and 3 cups of hot water. Stir well.
  • Cover and cook on medium heat until the water is absorbed.
  • Reduce the heat to low, place a paper towel over the rice, cover again, and let it steam for 10 minutes.
  • Remove from heat and allow it to cool slightly before adding lime juice and cilantro. Mix well and set aside.

3- Prepare the Black Beans:

  • In a small pot, heat 1 tablespoon of oil over medium heat.
  • Add minced garlic and chopped onion, sautรฉ for about 1-2 minutes until fragrant.
  • Stir in the black beans and 1/2 teaspoon of chicken bouillon.
  • Simmer for about 5 minutes, then remove from heat.

4- Assemble the Burritos:

  • Lay out all cooked items and toppings on a table.
  • Place a large flour tortilla on a plate.
  • Add chicken, cilantro lime rice, and black beans onto the tortilla.
  • Top with your choice of guacamole, pico de gallo, cheese, sour cream, queso, and hot sauce.
  • Roll the tortilla into a burrito and enjoy!
