Ingredients

Falafel:
🫘 2 cups Garbanzo beans (soaked overnight)
🧅 1 Onion
🧄 4 cloves of Garlic
🌿 2 cups of Parsley
🧂 2 teaspoons of Salt (or to taste)
🌶️ 1 teaspoon of Black Pepper
🌿 1 teaspoon of Cumin
🌿 1 teaspoon of Coriander
🧪 1/2 teaspoon of Baking Soda
🌾 2 tablespoons of Flour

Tahini Sauce:
🥛 2 tablespoons of Plain Yogurt
🍈 2 tablespoons of Tahini
🍋 1 tablespoon of Lemon Juice
🫒 1 tablespoon of Olive Oil
💧 1 tablespoon of Water
🧂 Salt and Black Pepper (to taste)


Instructions

1- Prepare the Falafel Mixture:

  • Drain the soaked garbanzo beans thoroughly. In a food processor, combine the garbanzo beans, onion, garlic, and parsley. Pulse until you achieve a coarse mixture.
  • Transfer the mixture to a bowl. Add flour, baking soda, salt, pepper, cumin, and coriander. Mix well to form a dough-like consistency.
  • Optionally, chill the mixture in the fridge for 20-30 minutes for firmer falafel.

2- Form the Falafel:

  • Heat oil in a pot over medium-high heat.
  • Using a tablespoon or your hands, shape portions of the mixture into balls or patties. Be gentle to keep the mix airy.

3- Fry the Falafel:

  • Carefully place the formed falafel into the hot oil. Fry until golden brown and crispy, about 3 minutes per side.
  • Remove from oil and place on a paper towel-lined tray to drain excess oil.

4- Make the Tahini Sauce:

  • In a small bowl, combine minced garlic, yogurt, tahini, lemon juice, olive oil, and water. Stir until smooth.
  • Season with salt and pepper to taste. Adjust ingredients to your preference.

5- Serve:

  • Serve the falafel hot with tahini sauce on the side or drizzled over the top. Enjoy as is, in a pita, or over a salad.
