Khoshaf, a delightful and traditional dish, is a staple during the holy month of Ramadan. This dried fruit compote brings together the sweet and exotic flavors of apricots, prunes, and figs, gently simmered with aromatic cardamom. Enjoy it as a refreshing dessert after Iftar, or as a sweet treat any time of the day. The longer it marinates in the fridge, the more the flavors meld into a delicious symphony.

Ingredients

🍑 1 cup of apricots

🍑 1 cup of prunes

🍑 1-2 cups of dried figs

🌰 1 cup of pecans

🍬 1/2 cup of sugar

🌿 6 cardamom pods

💧 6 cups of water


Instructions

1- Prepare the Base:

  • In a large pot, combine the apricots, figs, pecans, sugar, cardamom pods, and water. Ensure all ingredients are evenly distributed.

  • Cover the pot and bring the mixture to a gentle boil over medium-high heat.

2- Simmer the Fruits:

  • Once boiling, reduce the heat to medium-low and allow the mixture to simmer for about 15 minutes. This will allow the fruits to soften and the flavors to infuse.

3- Add the Prunes:

  • After the initial 15 minutes, add the prunes to the pot. Stir gently to combine and continue to simmer for an additional 10 minutes. This step ensures the prunes absorb the syrupy liquid while retaining their shape.

4- Cool and Store:

  • Turn off the heat and let the compote cool to room temperature. Once cooled, transfer the mixture into mason jars or airtight containers.

  • Store in the refrigerator for at least a few hours. For the best flavor, let it chill overnight.

5- Serve and Enjoy:

  • Serve the Khoshaf chilled as a sweet accompaniment to your Iftar meal or as a standalone dessert. Enjoy the burst of natural sweetness and aromatic richness!
