Biryani is a classic dish beloved across many cultures, and this Kurdish rendition with tender beef brings a flavorful twist. While biryani can be made with various meats or even as a vegetarian dish, the combination of spices, fried ingredients, and perfectly cooked basmati rice makes this version irresistibly delicious. Let's dive into creating this aromatic feast!

Ingredients

For the Beef:
🐄 2 pounds beef, cut into bite-size pieces
🧂 1 teaspoon 7 spice
🧂 1 teaspoon salt
🛢️ 1 tablespoon oil
💧 1 cup warm water

For the Fried Ingredients:
🥔 4 potatoes, peeled and cut into bite-size pieces
🌰 1 cup peeled almonds
🍇 1 cup raisins
🌿 1 cup peas

For the Rice:
🍚 2 cups basmati rice
🛢️ 1/4 cup oil
🍝 1/2 cup vermicelli
🌿 1 cinnamon stick
🌿 4 cardamom pods
🧂 1 tablespoon chicken bouillon
🧂 1 tablespoon 7 spice
🧂 1 teaspoon turmeric
🧂 1 tablespoon salt
💧 3 cups hot water

Instructions

1- Prepare the Beef:

  • Add the beef to a pot and cook on high heat for 15 minutes.
  • Add 7 spice, salt, oil, and warm water. Cover, reduce heat to medium-low, and cook for 40 minutes until the beef is tender. Set aside.

2- Fry the Ingredients:

  • Fry the potatoes until golden brown and set aside.
  • Lightly fry the almonds until golden.
  • Briefly fry the raisins for about 10 seconds until they puff up.
  • Fry the peas for about 20 seconds and set aside.

3- Cook the Rice:

  • Wash the basmati rice until water runs clear and soak it in warm water for 30 minutes.
  • Heat oil in a pot and add the vermicelli, cinnamon stick, and cardamom pods. Fry until the vermicelli turns brown.
  • Drain the rice and add it to the pot. Add salt, 7 spice, turmeric, chicken bouillon, and hot water. Mix well.
  • Cover and cook the rice on high until water evaporates, then reduce heat to low and cook for another 20 minutes. Remove the cinnamon stick.

4- Combine and Serve:

  • Mix the cooked beef, fried potatoes, almonds, raisins, and peas into the cooked rice.
  • Enjoy your aromatic Kurdish Beef Biryani!
