Instructions

1- Pressure Cook the Beef:

  • In a pressure cooker, add the beef chunks, a little water, and a pinch of salt.
  • Seal the lid and press the meat setting, cooking for 30 minutes until tender.

2- Cook the Beans:

  • In a large pot, cover the soaked white beans with water and bring to a boil on high heat.
  • Once boiled, reduce the heat and let them simmer for about 20 minutes, ensuring the beans maintain their shape.

3- Prepare the Stew Base:

  • In a separate pan, heat olive oil and sauté the chopped onion and minced garlic.
  • Cook until they become fragrant and golden brown.

4- Combine Ingredients:

  • Add the cooked beef to the onion-garlic mixture.
  • Stir in the chopped jalapeño, followed by the tomato paste dissolved in water, and the beef's cooking liquid.
  • Season with the mixed spices, salt, and chicken bouillon.

5- Finish the Stew:

  • Incorporate the cooked beans into the stew.
