Ingredients
- 🥩 500g beef, cut into chunks
- 🌾 1 cup basmati rice
- 🫘 1 cup white beans, soaked for 30 minutes

- 🧅 1 large onion, chopped
- 🌶 1 jalapeño, seeds removed and finely chopped
- 🍅 1/2 can tomato paste

- 🌿 1 teaspoon mixed spices (lemon pepper, paprika, cayenne pepper, garlic powder, allspice)
- 🥚 1 bouillon cube (or chicken seasoning)
- 🚰 Approximately 4 cups water
- 🥦 Vegetables of choice (such as 2 carrots and 2 potatoes) for side
Instructions
1- Pressure Cook the Beef:
- In a pressure cooker, add the beef chunks, a little water, and a pinch of salt.
- Seal the lid and press the meat setting, cooking for 30 minutes until tender.
2- Cook the Beans:
- In a large pot, cover the soaked white beans with water and bring to a boil on high heat.
- Once boiled, reduce the heat and let them simmer for about 20 minutes, ensuring the beans maintain their shape.
3- Prepare the Stew Base:
- In a separate pan, heat olive oil and sauté the chopped onion and minced garlic.
- Cook until they become fragrant and golden brown.
4- Combine Ingredients:
- Add the cooked beef to the onion-garlic mixture.
- Stir in the chopped jalapeño, followed by the tomato paste dissolved in water, and the beef's cooking liquid.
- Season with the mixed spices, salt, and chicken bouillon.
5- Finish the Stew:
- Incorporate the cooked beans into the stew.
- Bring everything to a boil, then reduce to a simmer.
- Let it cook for about 10-15 minutes, allowing the flavors to meld together. Adjust seasoning if needed.
6- Prepare the Rice:
- In a pot, add a teaspoon of olive oil and toast the basmati rice until slightly golden.
- Add enough hot water to cover, salt to taste, and cover the pot.
- Reduce heat to low once the water level drops, then cook until the rice is fully done, about 10 minutes.
7- Serve:
- Portion the stew into bowls, served alongside the fluffy basmati rice.
- Optionally, prepare roasted vegetables like potatoes and carrots as an accompaniment.
