Ingredients

🌮 2 cups leftover shredded beef
🌿 1 tablespoon fresh cilantro, chopped
🧅 1 small onion, diced
🌶️ 1 jalapeño, diced
🧀 1 cup shredded cheese (cheddar or Monterey Jack)
🥑 1 avocado, sliced
🌽 8 small corn tortillas
🫒 2 tablespoons olive oil
🍋 1 lime, cut into wedges
🧂 Salt, to taste
🫙 Salsa or hot sauce, for serving

Instructions

1- Prepare the Beef Filling:

  • In a medium-sized skillet over medium heat, add 1 tablespoon of olive oil.
  • Add diced onion and jalapeño to the skillet, sautéing for about 2-3 minutes until they begin to soften.
  • Add the leftover shredded beef to the skillet, mixing well with the onion and jalapeño. Cook for 4-5 minutes, stirring occasionally, until the mixture is heated through. Add salt to taste, then remove from heat.

2- Prepare the Tacos:

  • Heat a separate large skillet over medium-high heat. Add 1 tablespoon of olive oil.
  • Place one tortilla in the skillet, add a spoonful of the beef mixture to one half of the tortilla, and top with a sprinkle of cheese.
  • Fold the tortilla over, pressing gently with a spatula to close. Repeat with remaining tortillas.

3- Fry the Tacos:

  • Cook each taco for about 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted.
  • Remove from skillet and let them drain on paper towels to remove excess oil.

4- Serve:

  • Plate the tacos, topping with fresh cilantro, avocado slices, and a squeeze of lime.
  • Serve with salsa or hot sauce on the side.
