Instructions
1- Prepare the Beef Filling:
- In a medium-sized skillet over medium heat, add 1 tablespoon of olive oil.
- Add diced onion and jalapeño to the skillet, sautéing for about 2-3 minutes until they begin to soften.
- Add the leftover shredded beef to the skillet, mixing well with the onion and jalapeño. Cook for 4-5 minutes, stirring occasionally, until the mixture is heated through. Add salt to taste, then remove from heat.
2- Prepare the Tacos:
- Heat a separate large skillet over medium-high heat. Add 1 tablespoon of olive oil.
- Place one tortilla in the skillet, add a spoonful of the beef mixture to one half of the tortilla, and top with a sprinkle of cheese.
- Fold the tortilla over, pressing gently with a spatula to close. Repeat with remaining tortillas.
3- Fry the Tacos:
