Ingredients
Beef Mixture:

Tortilla Chips:

🥛 2 cans evaporated milk (12 ounces each)
🍂 1/4 teaspoon cumin
🧀 8 oz pepper jack cheese, grated
🧀 8 oz cheddar cheese (or American cheese), grated
Toppings (all to taste):
🍅 Pico de gallo
🥑 Guacamole
🥄 Sour cream
🌶️ Jalapeño slices (pickled or fresh)
Instructions
1- Prepare the Ground Beef:
- Heat a skillet over high heat, add the ground beef, and cook for about 10 minutes until browned.
- Add the onion and garlic to the skillet and sauté with the beef for an additional 2 minutes.
- Stir in the diced tomato and taco seasoning, cover with a lid, and let cook for another 5 minutes. Set the mixture aside.
2- Make the Tortilla Chips:
- Cut the corn tortillas into small triangle shapes.
- Heat oil in a deep fryer or a large skillet. Deep fry the tortilla pieces until they are crispy and golden.
- Remove from the oil and let drain on a wire rack or paper towels. Sprinkle with flake salt while still warm.
3- Prepare the Queso:
- In a separate saucepan, heat 1/2 tablespoon of olive oil over high heat, add minced garlic and jalapeño, and sauté for about 1 minute.
- Add the evaporated milk and cumin, stirring as you wait for the milk to warm.
- Reduce heat to low and slowly add the grated cheeses, stirring occasionally, until the cheese has fully melted and the sauce is smooth and creamy.
4- Assemble the Nachos:
- On a large serving platter, layer the tortilla chips first, followed by a layer of queso, then the seasoned beef. Add another layer of queso on top.
- Finally, top with pico de gallo, guacamole, sour cream, and jalapeño slices as desired.
