🍋 The juice of 1 lemon
🍅 3 tablespoons tomato paste
🌶️ 8 bell peppers (any color)
For the Tomato Sauce:
💧 2 cups water
🍅 6oz tomato paste
🫒 2 tablespoons olive oil
🍋 The juice of 1 lemon
🥄 1 tablespoon chicken bouillon
🌶️ 1/2 teaspoon black pepper
🧂 1/2 teaspoon salt
Instructions
1- Prepare the Filling:
- In a large bowl, combine the ground beef, washed rice, diced onion, diced tomato, minced garlic, and chopped parsley.
- Season with chicken bouillon, salt, black pepper, cumin, 7 spice, chili flakes, lemon juice, and tomato paste. Mix thoroughly until evenly combined.
2- Prepare the Peppers:
- Wash the bell peppers and slice off the tops. Remove the seeds and membranes inside.
- Stuff each bell pepper generously with the filling mixture until filled to the top.
3- Assemble the Dish:
- Place the stuffed peppers upright in a Dutch oven or a casserole dish.
4- Prepare the Tomato Sauce:
- In a mixing bowl, combine water, tomato paste, olive oil, lemon juice, chicken bouillon, black pepper, and salt. Stir well until the tomato paste is fully dissolved.
5- Cook the Dish:
- Pour the tomato sauce over the stuffed peppers. Cover with a lid or foil.
- Transfer to a preheated oven at 350°F (175°C) and bake for 1 and 1/2 hours, or until the rice is fully cooked and tender.
6- Garnish and Serve:
- Once out of the oven, garnish with freshly chopped parsley.
