Ingredients
🍞 25 frozen dinner rolls
🥬 1 pound spinach (washed and chopped)
🧅 1 medium-sized onion
🧄 3 cloves garlic
🫒 2 tablespoons olive oil
🌶️ 1/2 teaspoon black pepper
🌶️ 1/2 teaspoon chili flakes
🧂 1/2 teaspoon salt
🧀 8 oz feta cheese
🧀 2 cups mozzarella cheese (approximately)
🥚 2 eggs
🫒 2 additional tablespoons olive oil for the rolls
Instructions
1- Thaw the Rolls:
- Place the frozen dinner rolls on a tray lined with parchment paper. Cover the rolls and set them in a warm place to thaw for about 2 hours.
2- Prepare the Filling:
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about a minute.
- Stir in the salt, black pepper, and chili flakes. Add the chopped spinach, cooking for 4 to 5 minutes until wilted. Remove from heat and let the mixture cool slightly.
3- Mix the Filling:
- Transfer the cooled spinach mixture to a large bowl. Add the crumbled feta cheese, shredded mozzarella, and beaten eggs. Mix well until all ingredients are combined into a cohesive filling.
4- Assemble the Pies:
- Once the dough has thawed, drizzle a bit of olive oil on each roll. Using a half-cup measuring cup, press down in the center of each dough ball to create an indentation.
- Fill each indentation with a generous amount of the spinach cheese filling.
5- Bake:
- Preheat your oven to 375°F (190°C). Place the filled rolls on a baking sheet and bake for 18 to 20 minutes or until the tops are golden brown.
6- Serve and Enjoy:
- Remove from the oven and let cool slightly. These mini pies are best enjoyed warm!
