Ingredients

🍌 3 ripe bananas (plus 1 extra for the top)
🍬 1 cup sugar
🛢 1/2 cup vegetable oil

🫐 1 cup fresh blueberries (or frozen)
🌾 1 tablespoon flour (for the blueberries)
🫒 Avocado spray (for the loaf pan)

Instructions

1- Preheat the Oven:

  • Set your oven to 350°F (175°C) to ensure it's ready for baking.

2- Mash Bananas:

  • In a large mixing bowl, peel and mash the 3 ripe bananas using a potato masher or a fork until smooth.

3- Combine Wet Ingredients:

  • Add the sugar, vegetable oil, and almond milk to the mashed bananas.
  • Stir until the mixture is well combined.

4- Incorporate Dry Ingredients:

  • Gradually fold in the flour, cinnamon, baking powder, baking soda, and salt.
  • Stir until just combined, ensuring not to overmix.
  • It's okay to leave some lumps in the batter.

5- Prepare the Blueberries:

  • Toss the blueberries with 1 tablespoon of flour to prevent them from sinking in the batter.
  • Fold the prepared blueberries gently into the mixture.

6- Prepare the Loaf Pan:

  • Spray a loaf pan with avocado spray.
  • Transfer the batter into the pan.
  • Slice the extra banana in half lengthwise and place it on top of the batter along with a handful of additional blueberries.

7- Bake the Bread:

  • Place the loaf in the center rack of your preheated oven.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.

8- Cooling:

  • Allow the bread to cool in the pan for about 15 to 20 minutes before slicing.
