Ingredients
π 1 cup of maash (mung bean)
π 1 cup of basmati rice
π§ 4 cups of water
π’οΈ 1/4 cup of oil
π₯ 1 tablespoon of chicken bouillon
π§ 1 teaspoon of salt
πΆοΈ 1 teaspoon of black pepper
πΏ 1 teaspoon of cumin
For the onion topping:

1 large onion, sliced
π’οΈ 3 tablespoons of oil
Instructions
1- Prepare Mung Beans:
- Rinse the mung beans thoroughly under cold water.
- Place them in a pot, add 4 cups of water, and bring to a boil.
- Boil for about 25 minutes until they are slightly soft but not fully cooked.
2- Prepare Rice:
- While the mung beans are cooking, wash the basmati rice until the water runs clear to remove any excess starch.
- Soak the rice in clean water for 15-20 minutes, then drain.
3- Cook Mung Bean and Rice Pilaf:
- Once the mung beans have boiled for 25 minutes, add 1/4 cup of oil to the pot.
- Stir in the soaked and drained basmati rice.
- Season with chicken bouillon, salt, black pepper, and cumin. Mix well.
- Cover the pot and allow the water to evaporate. Once reduced, lower the heat.
- Cover and cook on low for another 20 minutes, allowing the flavors to meld and the rice to absorb the remaining liquid.
4- Prepare Onion Topping:
- Heat 3 tablespoons of oil in a frying pan.
- Add the sliced onion and cook until golden brown but not too crispy.
5- Serve:
- Once the pilaf is ready, serve it on a platter.
- Top with the fried onions for an added layer of flavor and texture.
