Ingredients
🦐 2 pounds raw shrimp
🧂 1.5 teaspoons salt (1 for shrimp, 0.5 for sauce)
🧄 1 teaspoon garlic powder
🌶️ 1 teaspoon paprika
🌿 1 teaspoon oregano
🧂 1.5 teaspoons black pepper (1 for shrimp, 0.5 for sauce)
🫒 1/4 cup extra virgin olive oil
🧈 2 tablespoons butter
🧅 1 large shallot, sliced
🧄 5 cloves garlic, sliced
🍅 1 pound cherry tomatoes, halved
🫒 1 cup green pitted olives, sliced
🌶️ 1/2 teaspoon chili flakes, or to taste
🍋 Zest of 1 lemon
🍋 Juice of half a lemon
🌿 1/2 cup chopped parsley (reserve a little for garnish)
Instructions
1- Prepare the Shrimp:
- Clean and devein the shrimp.
- Place them in a large bowl and pat dry with a paper towel.
2- Season the Shrimp:
- Add 1 teaspoon each of salt, garlic powder, paprika, oregano, and black pepper to the shrimp.
- Mix until evenly coated.
3- Sear the Shrimp:
- Heat a large pan over medium-high heat.
- Add the olive oil, then cook the shrimp in two batches for 1-2 minutes per side until pink.
- Remove the shrimp from the pan.
4- Sauté Aromatics:
- In the same pan, add butter, sliced shallots, and garlic.
- Sauté for about 2 minutes until fragrant.
5- Cook the Tomato and Olive Sauce:
- Add cherry tomatoes and olives to the pan.
- Stir and cook for about 5 minutes until the tomatoes soften and release some juices.
6- Season the Sauce:
- Add 0.5 teaspoons each of salt and black pepper, chili flakes, lemon zest, and lemon juice to the tomato mixture.
- Stir well.
7- Combine and Simmer:
- Return the cooked shrimp and their juices to the pan.
- Add the chopped parsley, toss everything together, and simmer for 4-5 minutes until the shrimp are thoroughly heated.
8- Garnish and Serve:
- Garnish with additional parsley and serve over rice, pasta, or with crusty bread. Enjoy!
