Instructions
1- Preparation:
- Rinse and chop the Swiss chard.
- Mince the garlic and chop the onion and potato.
2- Start Cooking:
- In a large pot, heat the olive oil over medium heat.
- Add the chopped chicken breast (if using) and sauté for about 3-5 minutes until the chicken is lightly browned.
3- Add Vegetables:
- Add the onion, garlic, and potato to the pot. Cook, stirring occasionally, for about 5 minutes until the onion becomes translucent.
4- Incorporate Soup Ingredients:
- Add the Swiss chard and frozen vegetables to the pot.
- Stir in the orzo, tomato paste, and chicken bouillon.
- Add enough water to cover all the ingredients by about an inch. Bring the mixture to a boil.
5- Season and Simmer:
- Once boiling, season the soup with salt, black pepper, cayenne pepper, and citric acid. Adjust the seasonings to taste.
- Reduce the heat to a simmer, cover the pot, and cook for about 10-15 minutes or until the orzo is tender.
