Ingredients

🌿 1 pound asparagus, trimmed
🍅 20-25 cherry tomatoes, cut in half
🫒 3 tablespoons olive oil
🧂 1/4 teaspoon salt (for asparagus and tomatoes)
⚫ 1/4 teaspoon black pepper (for asparagus and tomatoes)
🧀 1 box Boursin shallot & chives cheese
🥚 4 eggs
🌾 A pinch of salt and pepper (for the eggs)
🍞 Bread for dipping and dunking

Instructions

1- Preheat the Oven:

  • Preheat your oven to 400°F (200°C).
  • Place a cast iron skillet in the oven while it's preheating. This helps maintain the asparagus's crunchiness during baking.

2- Prepare the Vegetables:

  • Wash and trim the asparagus.
  • Pat them dry and cut the cherry tomatoes in half.

3- Prepare the Skillet:

  • Carefully remove the skillet from the oven.
  • Place the asparagus in a single layer in the skillet.
  • Arrange the halved cherry tomatoes around and atop the asparagus.

4- Season and Assemble:

  • Drizzle the olive oil over the asparagus and tomatoes.
  • Season with salt and pepper.
  • Crumble the Boursin cheese over the top.

5- Add the Eggs:

  • Crack 4 eggs over the mixture, spacing them evenly.
  • Sprinkle the eggs with a pinch of salt and pepper.

6- Bake:

  • Return the skillet to the oven and bake for 15-17 minutes.
  • Adjust the time to achieve your desired level of egg yolk runniness.

7- Serve:

  • Remove the skillet from the oven and serve immediately with crispy bread for dunking.
  • Enjoy the mix of textures and flavors as you dip and savor.
