Ingredients
๐ 1 whole chicken, cleaned and prepped
๐ถ๏ธ 1 tablespoon paprika
๐ฟ 1 tablespoon Montreal chicken seasoning
๐ง 1/2 tablespoon salt
๐ถ๏ธ 1 teaspoon black pepper
๐ถ๏ธ 1 teaspoon crushed red pepper
๐ฟ 1 packet of Sazรณn
๐ Juice of 1 lemon
๐ซ 1/3 cup olive oil
๐ฅ Carrots, chopped
๐ฅ Potatoes, cubed
๐ฅฌ Brussels sprouts, halved
๐ซ Additional olive oil for vegetables
๐ฟ Sazรณn con todo for vegetables
๐ถ๏ธ Additional crushed red pepper for vegetables (to taste)
Instructions
1- Prepare the Chicken:
- Start by removing excess fat from the chicken and trimming the tips of the wings.
- Clean the chicken thoroughly.
2- Make the Marinade:
- In a mixing bowl, combine paprika, Montreal chicken seasoning, salt, black pepper, crushed red pepper, the juice of 1 lemon, and 1/3 cup olive oil.
- Add the Sazรณn packet and mix until well combined.
3- Season the Chicken:
- Pour the marinade over the chicken, ensuring it is thoroughly coated.
- Donโt forget to rub the marinade into the back of the chicken as well.
4- Prepare the Vegetables:
- In a separate bowl, add chopped carrots, cubed potatoes, and halved Brussels sprouts.
- Season with Sazรณn con todo, a little more crushed red pepper for heat, and drizzle with olive oil.
- Mix until the vegetables are well coated.
5- Assemble the Dish:
- Place the seasoned chicken in an oven-safe dish.
- Surround the chicken with the seasoned vegetables.
6- Roasting:
- Cover the dish with foil and place it in a preheated oven at 375ยฐF (190ยฐC).
- Roast for 1.5 hours until the chicken is cooked through and the vegetables are tender.
7- Serve:
- Allow the chicken to rest for 10 minutes before carving.
- Serve alongside the roasted vegetables.
