Ingredients
For the Salmon:
🐟 7 salmon fillets
🧂 1 teaspoon salt
🌶️ 1 teaspoon Cajun seasoning
🧅 1 teaspoon onion powder
🧄 1 teaspoon garlic powder
🍋 1 teaspoon lemon pepper
🌶️ 1 teaspoon paprika
🫒 2 tablespoons olive oil
🧈 5 tablespoons unsalted butter
🧄 3 cloves of garlic, minced
🌿 1/4 cup fresh parsley, chopped
🍋 Juice of 2 lemons
For the Mashed Potatoes:
🥔 5 pounds potatoes, peeled, washed, cut, and boiled
🧈 1 stick unsalted butter
🍶 1/4 cup sour cream
🧂 1 teaspoon salt
⚫ 1/2 teaspoon black pepper
🥛 1 1/2 cups warm milk
For the Asparagus:
🌿 2 pounds asparagus, ends trimmed and washed
🫒 2 tablespoons olive oil
🧂 1/2 teaspoon salt
⚫ 1/2 teaspoon black pepper
🌶️ 1/2 teaspoon paprika
🧄 1/2 teaspoon garlic powder
🍋 Juice of 1/2 lemon
Instructions
1- Prepare the Mashed Potatoes:
- Peel, wash, and cut 5 pounds of potatoes into chunks. Boil them in salted water until fork-tender.
- Drain the potatoes and return them to the pot. Add 1 stick of unsalted butter, 1/4 cup sour cream, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Gradually pour in 1 1/2 cups of warm milk while mashing until creamy and smooth. Set aside.
2- Roast the Asparagus:
- Preheat your oven to 400°F (200°C).
- Trim the ends of the asparagus and wash thoroughly.
- Drizzle with 2 tablespoons of olive oil and season with 1/2 teaspoon each of salt, black pepper, paprika, and garlic powder. Squeeze the juice of 1/2 lemon over the asparagus.
- Spread the asparagus on a baking sheet and roast for about 20 minutes or until tender.
3- Pan-Sear the Salmon:
- Pat dry and cut each piece of salmon into fillets. Season with salt, Cajun seasoning, onion powder, garlic powder, lemon pepper, and paprika.
- Heat a skillet over medium-high heat and add 2 tablespoons of olive oil.
- Once hot, place the seasoned salmon fillets in the skillet, cooking for about 3 to 4 minutes per side. Remove and set aside.
4- Prepare the Butter Sauce:
- In the same skillet, add 5 tablespoons of unsalted butter. Once melted, add the minced garlic and sauté for about a minute.
- Add the chopped parsley and the juice of 2 lemons, stirring well to combine.
- Spoon the butter sauce over the cooked salmon fillets.
5- Serve:
- Plate the creamy mashed potatoes, oven-roasted asparagus, and pan-seared salmon.
- Drizzle the remaining butter sauce over the salmon before serving for extra flavor.
