Warm up with a bowl of homemade chicken noodle soup made effortlessly in a pressure cooker. Packed with hearty chicken breast, nutritious vegetables, and tender egg noodles, this dish is perfect for cozy nights and quick comforts.

Ingredients

🍗 2 chicken breasts
🍝 2 cups egg noodles
🧃 1 32oz container of chicken broth
🥕 1 cup of carrots, chopped
🥬 1 cup of celery, chopped
🧅 1 medium onion, diced
🧄 2 cloves of garlic, minced
🌿 1/2 teaspoon thyme
🌿 1/2 teaspoon oregano
🌿 2 bay leaves
🧂 1 tablespoon chicken bouillon
🌶️ 1/2 teaspoon black pepper
🧂 1/2 teaspoon salt
🫒 1 to 2 tablespoons oil
🧈 1 tablespoon butter
💧 2 cups water


Instructions

1- Preheat and Prepare:

  • Set your pressure cooker to sauté mode.
  • Add 1 to 2 tablespoons of oil and 1 tablespoon of butter into the pot to melt.

2- Cook Chicken:

  • Once the butter is melted, add the chicken breasts.
  • Sauté for 4 to 5 minutes, stirring occasionally, until lightly browned.

3- Sauté Vegetables:

  • Add the chopped carrots, celery, diced onion, and minced garlic to the pot.
  • Sauté for another 5 minutes, mixing occasionally, until the vegetables begin to soften.

4- Season It Right:

  • Sprinkle in the thyme, oregano, bay leaves, chicken bouillon, black pepper, and salt.
  • Stir everything well to incorporate the flavors.

5- Pour in Broth and Water:

  • Carefully add the entire carton of chicken broth and an additional 2 cups of water.
  • Give it a gentle mix.

6- Pressure Cook:

  • Close the lid of the pressure cooker and ensure the valve is set to pressure.
  • Select the "Soup" function and adjust the time to 15 minutes.

7- Finish Up:

  • Once the cooking cycle is complete, allow a natural pressure release for a few minutes, then manually release the remaining pressure.
  • Open the lid carefully.

8- Add Noodles:

  • Change to the sauté mode again, add in the egg noodles.
  • Cook for about 5 minutes or until the noodles are tender. Stir occasionally.

9- Taste and Adjust:

  • Taste the soup and adjust the seasoning with more salt, pepper, or chicken bouillon if needed.

10- Serve:
