Ingredients
๐ 2 chicken breasts, cut into big chunks
๐ฅ 4 to 5 potatoes, cut

๐ถ๏ธ 1 red bell pepper, cut
๐ถ๏ธ 1 jalapeรฑo, cut
๐ง 2 cloves of garlic, cut
๐บ 1 tablespoon of chicken bouillon
๐ง 1 tablespoon of Sazรณn con todo
๐ถ๏ธ 1/2 teaspoon black pepper
๐ถ๏ธ 1 teaspoon of paprika
๐ง 1/2 teaspoon of salt
๐ฟ 1 small package of Sazรณn
๐ 1/4 cup of lemon juice
๐ซ 1/3 cup of oil
For the Yellow Rice:
๐ 2 1/2 cups of basmati rice, washed and soaked for 20 minutes
๐ง 2 tablespoons of butter
๐ข๏ธ 2 tablespoons of oil
๐บ 1 tablespoon of chicken bouillon
๐ 1/2 teaspoon of turmeric
๐ฟ 1/2 teaspoon of cumin or cumin seeds
๐ง 3 cups of hot water
๐ง Salt to taste, about 1 tablespoon
Instructions
1- Preparing the Roasted Chicken and Vegetables:
- Preheat your oven to 375ยฐF (190ยฐC).
- In a large mixing bowl, combine the chicken chunks, potatoes, onions, red bell pepper, jalapeรฑo, and garlic.
- Add the chicken bouillon, Sazรณn con todo, black pepper, paprika, salt, Sazรณn package, lemon juice, and oil to the bowl.
- Mix everything thoroughly to ensure the chicken and vegetables are well-coated with the seasoning.
- Transfer the mixture to a large baking dish and spread it out evenly.
- Bake in the preheated oven for 1 to 1.5 hours, or until the chicken is fully cooked and the vegetables are tender, stirring halfway through for even cooking.
2- Preparing the Yellow Rice:
- While the chicken and vegetables are roasting, begin preparing your yellow rice.
- In a large saucepan over medium heat, melt the butter and add the oil.
- Stir in the chicken bouillon, turmeric, and cumin. Allow the spices to toast for about a minute, releasing their aroma.
- Add the soaked and drained basmati rice to the saucepan, stirring gently to coat the grains with the spice and oil mixture.
- Pour in the hot water and add salt to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is fully cooked and fluffy.
- Remove from heat and let it rest for a few minutes before fluffing with a fork.
