Ingredients
🍗 2 chicken breasts, cut into big chunks
🥔 4 to 5 potatoes, cut
🧅 2 medium onions, cut
🌶️ 1 red bell pepper, cut
🌶️ 1 jalapeño, cut
🧄 2 cloves of garlic, cut
🏺 1 tablespoon of chicken bouillon
🧂 1 tablespoon of Sazón con todo
🌶️ 1/2 teaspoon black pepper
🌶️ 1 teaspoon of paprika
🧂 1/2 teaspoon of salt
🌿 1 small package of Sazón
🍋 1/4 cup of lemon juice
🫙 1/3 cup of oil
For the Yellow Rice:
🍚 2 1/2 cups of basmati rice, washed and soaked for 20 minutes
🧈 2 tablespoons of butter
🛢️ 2 tablespoons of oil
🏺 1 tablespoon of chicken bouillon
🌕 1/2 teaspoon of turmeric
🌿 1/2 teaspoon of cumin or cumin seeds
💧 3 cups of hot water
🧂 Salt to taste, about 1 tablespoon
Instructions
1- Preparing the Roasted Chicken and Vegetables:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the chicken chunks, potatoes, onions, red bell pepper, jalapeño, and garlic.
- Add the chicken bouillon, Sazón con todo, black pepper, paprika, salt, Sazón package, lemon juice, and oil to the bowl.
- Mix everything thoroughly to ensure the chicken and vegetables are well-coated with the seasoning.
- Transfer the mixture to a large baking dish and spread it out evenly.
- Bake in the preheated oven for 1 to 1.5 hours, or until the chicken is fully cooked and the vegetables are tender, stirring halfway through for even cooking.
2- Preparing the Yellow Rice:
- While the chicken and vegetables are roasting, begin preparing your yellow rice.
- In a large saucepan over medium heat, melt the butter and add the oil.
- Stir in the chicken bouillon, turmeric, and cumin. Allow the spices to toast for about a minute, releasing their aroma.
- Add the soaked and drained basmati rice to the saucepan, stirring gently to coat the grains with the spice and oil mixture.
- Pour in the hot water and add salt to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is fully cooked and fluffy.
- Remove from heat and let it rest for a few minutes before fluffing with a fork.
