Ingredients

🫒 1/4 cup olive oil
🧅 1 shallot or small red onion, finely chopped
🧄 5 cloves of garlic, minced
🍅 2 small pints of cherry tomatoes
🧀 1 cup parmesan cheese, grated
💧 1 cup reserved pasta water
🌿 A handful of chopped fresh basil
🫒 Extra virgin olive oil for drizzling


Instructions

1- Cook the Linguine:

  • Begin by bringing a large pot of salted water to a boil over high heat.
  • Cook the linguine according to the package instructions until al dente.
  • Before straining, reserve 1 cup of pasta water. Strain the pasta and set it aside.

2- Prepare the Shrimp:

  • Pat the shrimp dry with paper towels.
  • Season them with paprika, garlic powder, black pepper, and salt.
  • Heat the olive oil in a large pan over medium to high heat.
  • Add the seasoned shrimp and cook for about 2 minutes per side until they are pink and opaque.
  • Remove the shrimp from the pan, place them on a plate, and set aside.

3- Cook the Vegetables:

  • In the same pan, add the chopped shallot and minced garlic.
  • Sauté for about a minute, allowing them to become aromatic.
  • Add the cherry tomatoes, cover the pan, and cook for about 10 minutes, stirring occasionally, until the tomatoes become tender and start to release their juices.

4- Combine with Pasta:

  • Add the cooked linguine, grated parmesan cheese, and the reserved pasta water to the pan.

5- Add Shrimp and Basil:

  • Return the cooked shrimp along with any accumulated juices to the pan.
  • Add the fresh basil and toss everything together gently but thoroughly.
