Ingredients
🍌 3 ripe bananas
🥚 2 eggs
🍬 1/2 cup granulated sugar
🍬 1/2 cup brown sugar
🧈 1 stick unsalted butter, melted
🥄 1/2 cup plain Greek yogurt
🧂 1 teaspoon baking powder
🧂 1/2 teaspoon baking soda
🧂 1 teaspoon cinnamon
🥣 1 and 1/2 cups all-purpose flour
🍫 1 and 1/4 cups chocolate chips (1 cup for inside the batter and 1/4 cup for on top)
Instructions
1- Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Line a loaf pan with parchment paper to ensure easy removal of the bread after baking.
2- Mash and Mix:
- In a large mixing bowl, mash the 3 ripe bananas with a fork.
- Crack the eggs into the bowl, then add the plain Greek yogurt, granulated sugar, brown sugar, and melted butter.
- Whisk all the ingredients together until you achieve a smooth and well-combined mixture.
3- Dry Ingredients and Fold:
- Sift in the flour, baking powder, baking soda, and cinnamon into the banana mixture.
- Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- Fold in 1 cup of chocolate chips until evenly distributed throughout the batter.
4- Pour and Top:
- Pour the batter into the prepared loaf pan, smoothing the surface with a spatula.
- Sprinkle the remaining 1/4 cup of chocolate chips evenly over the top of the batter for an extra chocolatey touch.
5- Bake:
- Place the loaf pan in the center of the preheated oven and bake for 55-60 minutes.
- You'll know it's ready when a toothpick inserted into the center comes out with a few moist crumbs attached.
- If needed, adjust the baking time slightly based on your oven.
6- Cool and Serve:
- Allow the banana bread to cool in the pan for about 10 minutes.
- Then, lift it out using the parchment paper and let it cool completely on a wire rack before slicing.
- Store any leftovers in an airtight container at room temperature for lasting freshness.
