Tawa, also known as Tepsi, is a traditional Kurdish casserole dish combining succulent chicken and hearty vegetables, all coated in a flavorful sauce. It's a versatile recipe that can be adjusted to suit your preference, whether you favor chicken, beef, lamb, or a vegetarian option. This dish is best enjoyed with rice or naan, making it a wholesome meal that's straightforward yet rich in flavor.

Ingredients

🍗 2 chicken breasts
🥔 3 potatoes
🍆 2 long purple eggplants
🧅 1 large onion
🧄 3 cloves of garlic
🌶️ 1 bell pepper (any color)
🍅 1 cup cherry tomatoes
🌶️ Green chilis or any hot pepper of choice
🫒 1/2 cup olive oil (use less if you like)
🥄 1 tablespoon chicken bouillon
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🍋 2 teaspoons lemon pepper
🧂 2 teaspoons salt
🌶️ 1/2 teaspoon chili flakes
🥄 1/2 teaspoon cumin
🧴 2 tablespoons balsamic vinegar
🍅 15oz tomato sauce
🌿 Chopped parsley for garnish


Instructions

1- Preheat Oven:

  • Preheat your oven to 400°F (200°C).

2- Prepare Ingredients:

  • Peel, wash, chop, and dice the chicken and all vegetables to roughly the same size for even cooking.

3- Make Sauce:

  • In the bottom of a casserole dish, combine olive oil, chicken bouillon, garlic powder, onion powder, lemon pepper, salt, chili flakes, cumin, balsamic vinegar, and tomato sauce.
  • Whisk together until you have a homogeneous sauce.

4- Mix Ingredients:

  • Add the diced chicken, potatoes, eggplants, onion, garlic, and bell pepper to the dish.
  • Mix everything thoroughly to coat all the ingredients in the sauce.

5- Add Toppings:

  • Place the cherry tomatoes and hot peppers on top of the mixture.

6- Cover Dish:

  • Cover the casserole dish with a wet piece of parchment paper to retain moisture.

7- Bake:

  • Bake in the preheated oven for 1.5 hours.

8- Garnish and Serve:

  • Once cooked, remove from the oven.
  • Garnish with freshly chopped parsley.
  • Serve hot, either on a bed of rice or with naan bread. Enjoy your flavorful Tawa!
