Ingredients
For the Tomato Bisque:
🥕 1 cup of carrots, peeled and chopped
🌿 3 celery stalks, chopped
🧅 1 onion, peeled and chopped
🧄 3 cloves of garlic, minced
🍅 1 (14oz) can of whole tomatoes or stewed tomatoes
🍅 1 (28oz) can of crushed tomatoes
🍗 Half of a 32oz carton of chicken broth
🧈 2 tablespoons of butter
🫒 2 tablespoons of oil
🌶️ 1/2 teaspoon of crushed red peppers
🧂 1/2 teaspoon of black pepper
🌿 1/2 teaspoon of thyme
🌿 1/2 teaspoon of oregano
🧂 1 teaspoon of salt
🥛 1/3 cup of heavy cream
🧀 1/2 cup of parmesan cheese, grated
For the Grilled Cheese Sandwiches:
🍞 Slices of your favorite bread
🧀 Medium cheddar cheese, sliced
🧀 Pepper jack cheese, sliced
🧈 Additional butter for grilling
Instructions
1- Prepare the Vegetables:
- In a large pot, melt the butter with the oil over medium heat.
- Add the onions, garlic, celery, and carrots. Sauté for about 5 minutes until the vegetables are tender and fragrant.
2- Simmer the Tomatoes:
- Stir in the whole and crushed tomatoes. Add the crushed red peppers, black pepper, thyme, oregano, and salt. Mix well.
- Pour in half of the chicken broth, stirring to combine. Let it simmer on medium-low heat for about 10 minutes.
3- Blend the Soup:
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches if necessary. Be careful with the hot liquid.
- Return the pureed soup to the pot.
4- Finish the Bisque:
- Stir in the heavy cream and grated parmesan cheese. Allow the bisque to simmer for another 5-10 minutes on medium-low heat. Adjust seasoning to taste.
5- Make the Grilled Cheese Sandwiches:
- Butter one side of each bread slice. Place slices of cheddar and pepper jack cheese between two slices of bread, with the buttered sides facing out.
- Heat a skillet over medium heat and grill each sandwich until golden brown and the cheese is melted, about 3-4 minutes per side.
