Ingredients for Mashed Potatoes

๐ 6-8 cups chicken broth or stock (enough to cover the potatoes)

๐ฅ 1 cup heavy cream
๐ฅฃ 1/2 cup sour cream
๐ถ๏ธ 1/2 teaspoon white or black pepper
๐ง 1/4 teaspoon salt (or to taste)
Ingredients for Gravy

1 shallot, finely diced
๐ง 2 cloves garlic, minced

๐ 3.5 cups chicken broth or stock (reserved from boiling the potatoes)
๐ฏ 1 teaspoon Dijon mustard
๐ถ๏ธ 1/4 teaspoon black pepper
๐ง A sprinkle of salt
Instructions
1- Prepare the Potatoes:
- Peel, rinse, and chop the potatoes into large chunks.
- Peel the whole head of garlic.
2- Boil:
- Place the potatoes and garlic in a large pot.
- Add salt and enough chicken broth or stock to cover the potatoes.
- Bring to a boil and cook until the potatoes are fork-tender, about 20-25 minutes.
3- Heat Cream and Butter:
- In a saucepan over low heat, combine the butter and heavy cream.
- Keep on low heat until the butter melts and the cream is warmed through.
4- Strain Potatoes:
- Once tender, strain the potatoes over a bowl to reserve the broth for gravy.
5- Mash:
- Return the strained potatoes to the pot.
- Add sour cream, the butter, and cream mixture, and season with salt and pepper.
- Mash until light and fluffy.
6- Gravy - Sautรฉ Aromatics:
- In a pan, melt 4 tablespoons of butter over medium-low heat.
- Add the diced shallot and minced garlic, cooking for about 1 minute until fragrant.
7- Make Roux:
- Stir in the flour until well combined.
