Chicken and cheese baked taquitos, known as booraks in Kurdish, are a delightful fusion of flavors and textures. These crispy treats can either serve as a delightful side dish or be the star of the show when paired with a comforting soup and vibrant salad. Perfect for gatherings or a cozy family dinner, these taquitos are both filling and delectable.

Ingredients

🫒 2 tablespoons olive oil
🧄 3 cloves garlic, minced
🧅 1 medium onion, chopped
🌶️ 1 bell pepper, any color, chopped
🍗 3 cups shredded chicken
🌮 2 tablespoons taco seasoning
🌶️ 1 tablespoon chili powder
🌶️ 1 tablespoon paprika
🧀 2 cups queso
🧀 2 cups shredded mozzarella cheese
🌿 A handful of cilantro, chopped
🌯 20 small tortillas
🥑 Avocado cooking spray

Instructions

1- Prepare the Chicken:

• You can boil 2 chicken breasts in water seasoned with salt and pepper, then shred them; or for convenience, use a store-bought rotisserie chicken, removing the breasts and shredding them.

2- Sauté the Vegetables:

• In a hot skillet, add 2 tablespoons of olive oil. Add the minced garlic, chopped onion, and bell pepper. Sauté for about 5 to 6 minutes until softened.

3- Mix in Chicken and Spices:

• Add the shredded chicken to the skillet.
• Season with taco seasoning, chili powder, and paprika.
• Stir well, and cook for an additional 2 minutes.

4- Combine with Cheese:

• Remove from heat and mix in queso, shredded mozzarella cheese, and chopped cilantro.
• Combine thoroughly.

5- Preheat and Assemble:

• Preheat your oven to 350°F (175°C).
• Spoon a few tablespoons of the chicken mixture onto the lower third of a tortilla. Roll the tortilla tightly.

6- Bake:

• Place the rolled tortillas seam side down on a parchment-lined baking sheet.
• Spray with avocado cooking spray.
• Bake for 25 to 30 minutes until the taquitos turn golden brown.

7- Enjoy:

• Remove from the oven and let cool slightly before serving.
