Ingredients
🍽️ 1 pound of cheese tortellini
🌿 1 cup of pesto
🍅 1 quart cherry tomatoes
🧀 8 oz of pearl mozzarella
🥬 Mixed greens (baby spinach and baby arugula)
🍋 The juice of half a lemon
🧂 1/2 teaspoon flake salt
Instructions
1- Cook Tortellini:
- Boil the tortellini in salted water for about 4 to 5 minutes, or as directed on the package instructions. Once cooked, strain and set aside.
2- Prepare the Salad Mix:
- In a large bowl, combine the cooked tortellini with 1 cup of pesto.
- Cut the cherry tomatoes in half and add them to the tortellini.
