Ingredients
🐔 2 large chicken breasts, diced small
🌶️ 1 large bell pepper or a bunch of small ones
🧅 1 large onion
🧄 2 cloves of garlic
🌶️ 1/2 tablespoon paprika
🌿 1 teaspoon cumin
🌶️ 1 teaspoon black pepper
🌶️ 1 teaspoon chili powder
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌶️ 1 teaspoon chili flakes
🧂 1/2 tablespoon salt
📦 1 packet of Sazón
🍋 Juice of half a lemon
🥄 1 tablespoon of oil
🌮 7 tortillas
🧀 Cheese (mozzarella and Mexican blend)
Instructions
1- Prepare Ingredients:
- Dice the chicken breasts into small pieces.
- Slice and chop the onion, garlic, and bell peppers.
2- Marinate the Chicken:
- In a mixing bowl, combine the diced chicken with paprika, cumin, black pepper, chili powder, garlic powder, onion powder, chili flakes, salt, Sazón, and lemon juice.
- Mix well to ensure all the chicken pieces are coated in the marinade.
- Allow the chicken to marinate for at least 1 hour. For enhanced flavor, marinate overnight.
3- Cook the Chicken and Vegetables:
- Heat a tablespoon of oil in a skillet over medium heat.
- Add the marinated chicken to the skillet and cook for about 10 minutes, stirring occasionally until fully cooked.
- Add the chopped vegetables (onion, garlic, bell peppers) to the skillet. Cook for an additional 2-3 minutes until the vegetables are tender, then remove from heat.
4- Assemble the Quesadillas:
- Heat a clean skillet over medium heat and add a little oil, spreading it around with a paper towel.
- Place a tortilla on the skillet and sprinkle a generous amount of mozzarella and Mexican blend cheese over half of the tortilla.
- Spread a portion of the chicken and vegetable mixture over the cheese.
- Fold the tortilla over to form a half-moon shape and press down gently.
- Toast the quesadilla on both sides until golden brown and the cheese is melted.
5- Serve:
- Cut the quesadilla into wedges and serve with guacamole, salsa, and sour cream for dipping.
