Ingredients
🥬 1 bag of spinach, washed and chopped
🧅 1 medium-sized onion, chopped
🍚 2 containers of ricotta cheese (15 oz each)
🍳 1 egg
🍝 1 package of lasagna noodles
🧀 1½ cups of mozzarella cheese, shredded
🍅 1 jar of your favorite pasta sauce
🧂 1 teaspoon of chicken bouillon
🧄 ½ teaspoon of garlic powder
🌶️ ½ teaspoon of black pepper
🍶 1 tablespoon of oil
🌿 1 teaspoon of salt
Instructions
1- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2- Sauté the Vegetables:
- Heat 1 tablespoon of oil in a large pan over medium heat.
- Add the chopped onion and sauté until softened, about 3-4 minutes.
- Add the chopped spinach and 1 teaspoon of chicken bouillon, and cook until the spinach wilts, about 5 minutes.
- Remove from heat and let it cool.
3- Prepare Ricotta Filling:
- In a large mixing bowl, combine the ricotta cheese, egg, 1 cup of mozzarella cheese, salt, garlic powder, and black pepper.
- Stir in the cooled spinach and onion mixture until well blended.
4- Cook the Lasagna Noodles:
- Boil the lasagna noodles according to the package instructions until al dente.
- Drain and lay them flat on a clean surface.
5- Assemble the Roll-Ups:
- Spread a thin layer of pasta sauce at the bottom of a casserole dish.
- Take one lasagna noodle, spread a generous layer of the ricotta-spinach mixture on top, then gently roll it up.
- Place the roll seam-side down in the casserole dish. Repeat with the remaining noodles and filling.
6- Add Sauce and Cheese:
- Pour some marinara sauce over the roll-ups, ensuring each roll is coated.
- Sprinkle the remaining ½ cup of mozzarella cheese on top.
7- Bake the Roll-Ups:
- Cover the dish with foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
8- Serve:
