Ingredients
🍤 1 1/2 to 2 pounds of shrimp, tails removed
🍝 1 1/2 pounds of penne pasta
🧅 1 large onion, sliced
🌶️ 1 red bell pepper, sliced
🌶️ 1 yellow bell pepper, sliced
🧄 3 cloves of garlic, minced
🌶️ 1 1/2 tablespoons Cajun seasoning (plus an additional 1/2 to 1 tablespoon for the sauce)
🥛 1 cup of heavy cream
🥛 1 cup of milk
🍗 1 cup of chicken broth
🧀 1 cup of shredded mozzarella cheese
🧀 1 cup of parmesan cheese
🌾 1/4 cup of flour
🧈 1 stick of unsalted butter, divided
Instructions
1- Prepare the Pasta:
- Boil a large pot of salted water. Add 1 1/2 pounds of penne pasta, cooking according to package instructions (8-10 minutes). Drain and set aside.
2- Prep Ingredients:
- Slice the onion and bell peppers. Mince the garlic.
3- Season and Cook Shrimp:
- In a bowl, season shrimp with 1 1/2 tablespoons of Cajun seasoning.
- Heat a large skillet over high heat with 1 tablespoon of oil and 2 tablespoons of butter. Once hot, add shrimp and cook for about 1 minute on each side. Remove shrimp and set aside.
4- Sauté Vegetables:
- In the same skillet, add another tablespoon of butter and sauté the onions and bell peppers for 1-2 minutes until slightly softened. Remove and set aside.
