🍗 8 thin chicken cutlets
🌶️ 1 tablespoon Cajun seasoning
🌿 1 teaspoon oregano
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder

🧂 1/2 teaspoon black pepper
🧂 1/2 teaspoon salt
🥚 3 eggs
🍞 2 cups Italian style breadcrumbs

🍝 1 LB Farfalle pasta
For the Sauce:
🧈 3 tablespoons unsalted butter
🫒 1 tablespoon olive oil
🧅 1 medium onion, diced
🌶️ 1 red bell pepper, sliced
🌶️ 1 orange bell pepper, sliced
🌶️ 1/2 yellow bell pepper, sliced
🧄 3 cloves garlic, minced
🥛 1 cup heavy cream
🍗 2 cups chicken broth
🌶️ 1 tablespoon Cajun seasoning
🌶️ 1 teaspoon paprika
🌶️ 1 teaspoon chili powder
🧅 1 teaspoon onion powder
🧄 1 teaspoon garlic powder
🧂 1/2 teaspoon black pepper
🧀 2 cups parmesan cheese
🌿 1 tablespoon fresh basil or dried
Instructions
1- Prepare the Chicken:
- Season both sides of the chicken cutlets with Cajun seasoning, oregano, garlic powder, onion powder, paprika, black pepper, and salt.
- In a bowl, whisk the eggs. In another bowl, mix the breadcrumbs and Parmesan cheese.
- Dip each chicken cutlet first in the eggs, then in the breadcrumb mixture, ensuring both sides are well-coated. Set aside.
- In a skillet, heat oil over medium heat. Fry the breaded chicken cutlets for about 3 to 4 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
2- Cook the Pasta:
- Boil Farfalle pasta according to the package instructions until al dente. Drain and set aside.
3- Make the Sauce:
- In a large pan over high heat, melt the butter and add the olive oil.
- Sauté the onions, red bell peppers, orange bell peppers, and garlic for about 3 to 4 minutes until softened.
- Add the heavy cream, chicken broth, Cajun seasoning, paprika, chili powder, onion powder, garlic powder, and black pepper. Stir well and bring to a boil.
- Stir in the Parmesan cheese and continue to cook until the sauce thickens.
4- Combine and Serve:
- Toss the cooked pasta into the sauce and mix until well-coated.
- Plate the pasta and top with the crispy chicken cutlets. Garnish with grated Parmesan cheese and fresh basil.
