Ingredients
For the Salad:
🍝 1 lb Ditalini pasta (boil in salted water until al dente)

🧅 1/2 small red onion, diced

For the Chipotle Dressing:
🥛 1 cup plain Greek yogurt
🥄 1/2 cup mayonnaise
🫒 1/4 cup extra virgin olive oil
🍎 2 tablespoons apple cider vinegar
🌶️ 3 chipotle peppers in adobo sauce (from can)
🥄 1 tablespoon adobo sauce (from the same can)
🥄 2 tablespoons Dijon mustard
🍯 2 tablespoons honey
🌶️ 1/2 teaspoon smoked paprika (or regular)
🌿 1/2 teaspoon oregano
🥄 1/4 teaspoon cumin
🧄 1 clove garlic
🍋 The juice of 1 lime
🧂 1/2 teaspoon salt, or to taste
Instructions
1- Cook the Pasta:
- Boil Ditalini pasta in salted water according to package instructions until al dente.
- Drain and set aside, allowing it to cool.
2- Prep the Veggies:
- While the pasta is cooking, chop the cherry tomatoes, red bell pepper, and red onion.
- Rinse and drain the black beans, and steam the corn if using frozen.
3- Make the Dressing:
