Instructions
1- Preheat your Oven:
- Preheat the oven to 400°F (200°C).
2- Prepare the Carrots:
- If using baby carrots, cut them in half diagonally; if using regular carrots, slice them into uniform sticks.
- Place the carrots in a large bowl and season them with balsamic vinegar, olive oil, thyme, onion powder, garlic powder, black pepper, paprika, salt, and honey. Toss the carrots to ensure they are evenly coated.
3- Roast the Carrots:
- Spread the seasoned carrots on a baking tray lined with parchment paper, ensuring they are in a single layer.
- Roast in the oven for 30-35 minutes, flipping them halfway through, until they are tender and caramelized.
4- Prepare the Feta Dip:
- While the carrots are roasting, prepare the feta dip. If the feta is in water, pat it dry.
- In a bowl, use a fork to break up the feta cheese.
- Add the Greek yogurt, lemon zest, minced garlic, lemon juice, chopped parsley, chopped mint, extra virgin olive oil, honey, and salt. Mix thoroughly to combine.
5- Assemble the Dish:
- Spread the prepared feta dip across a serving plate.
- Once the carrots are done roasting, remove them from the oven and place them on top of the feta dip.
6- Garnish and Serve:
- Garnish with additional chopped fresh parsley, a sprinkle of Aleppo pepper, and a drizzle of extra virgin olive oil.
- Serve immediately and enjoy the delicious combination of flavors.
