Instructions
1- Activate the Yeast:

2- Mix Dry Ingredients:
- In a large mixing bowl, combine 4 cups of all-purpose or bread flour with 1¼ teaspoons of salt.
3- Create the Dough:
- Pour the activated yeast mixture into the flour and salt.
- Mix with a Danish dough whisk (OXO brand recommended) until you have a sticky dough.
4- Incorporate Olive Oil:
- Drizzle 1 tablespoon of olive oil around the edges of the dough.
- Mix gently without kneading.
5- First Rise:
- Cover the bowl with plastic wrap and a clean kitchen towel.
- Let the dough rise for 1½ hours until doubled in size.
6- Shape the Rolls:
- With gloves on to handle the sticky dough, divide it into 5-6 balls.
- Shape them and place on a parchment-lined baking sheet.
7- Second Rise:
- Cover the rolls loosely with a clean kitchen towel.
- Let them rise for another 30-40 minutes until puffed.
8- Preheat the Oven:
- Preheat your oven to 450°F (232°C).
9- Score the Rolls:
- Using Fiskars kitchen scissors or a sharp serrated knife, score the tops of each roll in a cross pattern about ½ inch deep.
10- Bake with Steam:
- Place a baking tray filled with hot water on the bottom rack of the oven to create steam.
- Position the baking sheet with rolls on the middle rack and bake for 30-35 minutes until they are golden brown.
11- Cool Down:
- Rest rolls on the pan for 5 minutes, then transfer to a wire rack to cool entirely.
