Ingredients
For the Cake:
🥚 4 eggs
🍚 1 cup sugar
🍦 1 tablespoon vanilla extract
🥛 1 cup milk
🧈 2 sticks of unsalted butter (1 cup)
🍶 1 tablespoon baking powder
🌾 2 cups of flour
🧴 Cooking spray for the pan
For the Pineapple Filling:
🍍 1 pineapple (peeled and chopped)
🍚 1 cup of sugar
🌽 1 tablespoon of corn starch
💧 1/4 cup of water
For the Whipped Cream:
🥛 1 cup of heavy whipping cream
🥫 1/2 cup of sweetened condensed milk
Instructions
1- Prepare the Cake:
- Preheat your oven to 350°F (175°C). Prepare a cake pan by spraying it with cooking spray.
- In a large mixing bowl, combine 4 eggs, 1 cup of sugar, and 1 tablespoon of vanilla extract. Mix well until frothy.
- Add 1 cup of milk and 2 sticks of melted unsalted butter. Stir until the mixture is smooth.
- Gradually add in 1 tablespoon of baking powder and 2 cups of flour. Mix until just combined, being careful not to overmix.
- Pour the batter into the prepared cake pan. Bake in the preheated oven for 35 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool on a wire rack.
2- Prepare the Pineapple Filling:
- In a pot, combine the chopped pineapple and 1 cup of sugar. Bring the mixture to a boil over medium heat, stirring occasionally. Let it simmer for 15 minutes.
- Once the pineapple mixture has softened, use an immersion blender to purée until smooth.
- In a separate small bowl, mix 1/4 cup of water with 1 tablespoon of cornstarch to form a slurry.
- Add the cornstarch slurry to the puréed pineapple and return to heat. Boil on medium heat for another 4 to 5 minutes until thickened. Remove from heat and let it cool completely.
3- Prepare the Whipped Cream:
- In a chilled mixing bowl, combine 1 cup of heavy whipping cream and 1/2 cup of sweetened condensed milk.
- Whip the mixture using an electric mixer until stiff peaks form.
4- Assemble the Cake:
- Once the cake and pineapple filling have cooled, spread the pineapple filling evenly over the cake.
- Top with a generous layer of whipped cream.
