For the Chicken:
🐔 4 chicken breasts, diced

For the Black Beans:
🥫 2 cans black beans (15.5oz each)
🍅 1 can diced tomatoes with green chilies (10oz)
🌿 1/4 teaspoon cumin
🍗 1/2 teaspoon chicken bouillon powder
For the Cilantro Lime Rice:
🍚 2 cups rice (cooked according to package instructions)
🌿 1 cup chopped cilantro
🍋 Juice of 2-3 limes
For the Guacamole:
🥑 3 avocados
🍋 Juice of 1 lime
🌶️ 1 tablespoon chopped jalapeño
🧅 1 tablespoon chopped red onion
🍅 2 tablespoons chopped tomatoes
🌿 1 tablespoon cilantro
🧂 1/2 teaspoon salt
For the Pico de Gallo:
🍅 3 small tomatoes
🧅 1/2 small red onion
🌶️ 1 jalapeño, seeds removed
🌿 1/4 cup cilantro
🍋 Juice of 1 lime
🧂 1/2 teaspoon salt
Additional Ingredients:
🌯 Large tortillas
🧀 Queso
🧀 Shredded Cheese (Pepper Jack recommended)
🧴 Cooking spray for toasting the burritos
Instructions
1- Marinate and Cook the Chicken:
- Dice chicken breasts into small pieces and place them in a bowl.
- Add chipotle peppers, minced garlic, chopped cilantro, lime juice, salt, paprika, garlic powder, cumin, black pepper, and olive oil.
- Mix well and marinate for a couple of hours or cook immediately.
- In a pan, cook the chicken on high heat for about 15 minutes or until fully cooked.
2- Prepare the Black Beans:
- In a pot, combine the black beans, diced tomatoes with green chilies, cumin, and chicken bouillon powder.
- Bring the mixture to a boil on medium heat for about 15 minutes.
3- Make the Cilantro Lime Rice:
- Cook 2 cups of rice as per package instructions.
- Once cooked, stir in the chopped cilantro and lime juice.
4- Prepare the Guacamole:
- In a bowl, mash the avocados.
- Mix in lime juice, chopped jalapeño, red onion, tomatoes, cilantro, and salt.
5- Assemble Pico de Gallo:
- Mix together tomatoes, red onion, jalapeño, cilantro, lime juice, and salt in a bowl.
6- Assemble the Burrito:
- Spread queso on a large tortilla, followed by shredded cheese, cilantro lime rice, chicken, black beans, pico de gallo, and guacamole.
- Add more shredded cheese, then fold in the sides of the tortilla and roll it up burrito-style. Avoid overfilling.
- Place seam-side down in a greased skillet and toast on all sides until golden brown.
7- For the Burrito Bowl:
- Begin with a bed of cilantro lime rice, then top with chicken, black beans, pico de gallo, and guacamole.
