Beef Bulgogi is a quintessential Korean dish that melds savory, sweet, and spicy flavors in a harmonious blend. Perfectly marinated thinly sliced beef is quick-fried to retain its tenderness, then paired with vibrant sautéed bok choy and served over fluffy white rice for a complete and satisfying meal.

Ingredients

For the Beef Bulgogi:

🥩 2 pounds of thinly sliced beef
🧅 2 small onions, sliced
🧅 1 small onion (for the marinade)
🧄 5 cloves of garlic
🫚 1 tablespoon of ginger
🍐 1 Asian pear (or substitute with a regular pear or an apple)
🍯 1/4 cup brown sugar
🥢 1/2 cup of dark or light soy sauce
🥄 1 tablespoon of sesame oil
💧 1/2 cup of water
🍳 3 tablespoons of oil for cooking

For the Sautéed Bok Choy:

🥬 Bok choy
🥄 1 teaspoon of sesame oil
🍳 1 tablespoon of regular oil
🧄 2 cloves of garlic
🥢 1 tablespoon of soy sauce
🌶️ Crushed pepper flakes to taste

Instructions

  1. Prepare the Marinade:

    • In a blender or food processor, combine the small onion, garlic, ginger, pear, brown sugar, soy sauce, sesame oil, and water. Blend until smooth.
  2. Marinate the Beef:

    • Place the sliced beef and sliced onions in a large mixing bowl.
    • Pour the marinade over the beef and onions. Mix well to coat all the pieces evenly.
    • Cover and refrigerate for 30 minutes to 1 hour to allow the flavors to meld.
  3. Cook the Beef:

    • Heat 3 tablespoons of oil in a large skillet over high heat.
    • Once the oil is sizzling hot, add the marinated beef and onions.
    • Stir-fry, ensuring all pieces are cooked thoroughly until the beef turns brown (about 10-15 minutes).
  4. Sauté the Bok Choy:

    • Heat the sesame oil and regular oil in another skillet over medium-high heat.
    • Add the garlic and sauté until fragrant.
    • Introduce the bok choy, soy sauce, and crushed pepper flakes. Sauté the bok choy until tender, approximately 2 minutes.
  5. Serve:

    • Plate the cooked beef over a bed of white rice.
    • Add the sautéed bok choy alongside.
    • Optionally, garnish with sesame seeds and sliced green onions before serving.
