Instructions

1- Prepare your vegetables:

  • Begin by washing, peeling, and chopping the onion, carrots, and celery.
  • Mince the garlic cloves to have everything ready to use.

2- Sauté the vegetables:

  • In a large pot over high heat, melt the stick of butter.
  • Add the chopped onions, carrots, celery, and minced garlic.
  • Sprinkle with a teaspoon of salt and sauté for about 5 minutes until the vegetables are slightly tender.

3- Toast the orzo:

  • Add the orzo to the pot with the vegetables and sauté for another 3 minutes until the orzo is lightly toasted.

4- Simmer the soup:

  • Mix in the shredded rotisserie chicken, thyme, black pepper, paprika, chili flakes, rosemary, chicken broth, chicken bouillon, and heavy cream.
  • Give it a good stir.
  • Cover the pot, reduce the heat to medium-high, and let it simmer for 15 to 20 minutes until the orzo is cooked, and the soup has thickened.

5- Finish with greens:
