🌿 1/2 teaspoon rosemary
🍗 2 x 32oz cartons of chicken broth
🧂 1/2 tablespoon chicken bouillon
🥛 1 cup heavy cream
🍃 8oz spinach
🍋 Juice of 1 lemon
Instructions
1- Prepare your vegetables:
- Begin by washing, peeling, and chopping the onion, carrots, and celery.
- Mince the garlic cloves to have everything ready to use.
2- Sauté the vegetables:
- In a large pot over high heat, melt the stick of butter.
- Add the chopped onions, carrots, celery, and minced garlic.
- Sprinkle with a teaspoon of salt and sauté for about 5 minutes until the vegetables are slightly tender.
3- Toast the orzo:
- Add the orzo to the pot with the vegetables and sauté for another 3 minutes until the orzo is lightly toasted.
4- Simmer the soup:
- Mix in the shredded rotisserie chicken, thyme, black pepper, paprika, chili flakes, rosemary, chicken broth, chicken bouillon, and heavy cream.
- Give it a good stir.
- Cover the pot, reduce the heat to medium-high, and let it simmer for 15 to 20 minutes until the orzo is cooked, and the soup has thickened.
5- Finish with greens:
- Stir in the spinach and the juice of one lemon.
- Mix well until the spinach has wilted slightly.
