Ingredients for Meatloaf
🥩 2 pounds ground beef
🥬 1 to 2 cups celery, finely chopped
🧅 1 medium onion, finely chopped
🧄 3 cloves garlic, minced
🥛 1/2 cup milk
🍞 1 cup breadcrumbs
🥚 2 eggs
🌿 1/2 cup parsley, chopped
🧂 1 tablespoon salt (or to taste)
🐔 1 tablespoon chicken bouillon
🌶️ 1/2 tablespoon paprika
⚫ 1/2 teaspoon black pepper
🍃 1/2 teaspoon oregano
🌱 1 teaspoon thyme
🍅 2 heaping tablespoons tomato paste
🍅 1/3 cup ketchup
🍬 1/2 tablespoon brown sugar
Ingredients for Mashed Potatoes
🥔 1 to 2 pounds potatoes, peeled and cut into large cubes
🥣 1 to 1 1/2 cups chicken broth
🧈 1 stick butter
🥛 1 cup warm milk
🧂 1 teaspoon salt
⚫ 1/2 teaspoon black pepper
Instructions
1- Preheat and Prep:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
2- Sauté Vegetables:
- In a skillet, heat 1 to 2 tablespoons of oil over medium heat.
- Sauté the chopped celery, onion, and garlic for about 4-5 minutes until softened.
3- Mix Meatloaf Ingredients:
- In a large bowl, combine the ground beef, sautéed vegetables, breadcrumbs, milk, eggs, parsley, tomato paste, salt, chicken bouillon, paprika, black pepper, oregano, and thyme.
- Mix until well blended.
4- Shape and Glaze:
- Shape the meat mixture into a loaf and place it on the prepared baking sheet.
- In a small bowl, mix the ketchup and brown sugar, then brush half of it over the top of the meatloaf.
5- Bake the Meatloaf:
- Bake in the preheated oven for 45 to 50 minutes.
- Brush with the remaining ketchup mixture five minutes before finishing to enhance the glaze.
6- Rest:
- Remove from the oven and let the meatloaf rest for 10 to 15 minutes before slicing.
7- Prepare Mashed Potatoes:
- Place the cubed potatoes in a pressure cooker.
- Add chicken broth and cook under pressure for 15 minutes.
8- Mash and Season:
- Release the pressure, then add the butter, warm milk, salt, and pepper to the potatoes.
- Mash until smooth and creamy, keeping warm until serving.
