Ingredients

Dough:
🥣 6 cups flour
🧂 1 tablespoon salt
🥄 2 tablespoons baking powder
🫒 3 tablespoons olive oil
💧 2 1/4 cups warm water

Leek Filling:
🥬 3 large leeks, thoroughly washed and finely chopped
🧂 1 teaspoon salt
🫒 2-3 tablespoons olive oil
🌾 1 tablespoon flour

Cheese Filling:
🧀 1 cup mozzarella cheese
🧀 1 cup cheddar cheese
🧀 1 package Boursin cheese with garlic and fine herbs


Instructions

1- Prepare the Dough:

  • In a large mixing bowl, combine 6 cups of flour, 2 tablespoons baking powder, and 1 tablespoon salt. Mix well.
  • Add 3 tablespoons olive oil and gradually incorporate the warm water, a cup at a time, mixing until a dough forms.
  • Knead the dough for a few minutes, cover with a damp cloth, and let it rest for 20 minutes.

2- Prepare the Leek Filling:

  • Thoroughly wash the leeks by cutting them in half, washing each leaf individually to remove all dirt. Optionally, soak chopped leeks in water with a splash of vinegar for 5 minutes to ensure cleanliness.
  • Heat 2-3 tablespoons of olive oil in a pot over medium heat. Add the leeks and 1 teaspoon of salt, and cook for 4-5 minutes until they soften.
  • Sprinkle 1 tablespoon of flour over the leeks and mix well, allowing it to absorb any excess moisture. Cook for another 5 minutes. Set aside.

3- Prepare the Cheese Filling:

  • In a separate bowl, combine 1 cup of mozzarella, 1 cup of cheddar, and 1 package of Boursin cheese. Mix thoroughly and set aside.

4- Assemble the Naan:

  • Divide the resting dough into small balls, roughly 1-2 inches in diameter.
  • Roll each dough ball into a flat circle. Place a tablespoon of leek or cheese filling in the center.
  • Fold the dough over the filling to form a half-moon shape and pinch the edges tightly to seal.

5- Fry the Naan:

  • Heat about 3 cups of oil in a deep frying pot on high. Once hot, carefully slide the filled naans into the oil.
  • Fry each naan until golden brown on both sides, about 3-4 minutes per side. Carefully remove and drain on paper towels.
