Instructions
1- Prepare the Dough:
- In a large mixing bowl, combine 6 cups of flour, 2 tablespoons baking powder, and 1 tablespoon salt. Mix well.
- Add 3 tablespoons olive oil and gradually incorporate the warm water, a cup at a time, mixing until a dough forms.
- Knead the dough for a few minutes, cover with a damp cloth, and let it rest for 20 minutes.
2- Prepare the Leek Filling:
- Thoroughly wash the leeks by cutting them in half, washing each leaf individually to remove all dirt. Optionally, soak chopped leeks in water with a splash of vinegar for 5 minutes to ensure cleanliness.
- Heat 2-3 tablespoons of olive oil in a pot over medium heat. Add the leeks and 1 teaspoon of salt, and cook for 4-5 minutes until they soften.
- Sprinkle 1 tablespoon of flour over the leeks and mix well, allowing it to absorb any excess moisture. Cook for another 5 minutes. Set aside.
3- Prepare the Cheese Filling:
- In a separate bowl, combine 1 cup of mozzarella, 1 cup of cheddar, and 1 package of Boursin cheese. Mix thoroughly and set aside.
