Boreks, a popular pastry in many Middle Eastern and Mediterranean cuisines, can be stuffed with a variety of delectable fillings. Today, we are creating two delicious variations: a savory spinach and cheese one, and a zesty buffalo chicken version. Perfect for lunch or a snack, these boreks are sure to satisfy both children and adults alike.
Ingredients
For the Dough:
🥛 1 cup warm milk
🍯 1 tablespoon yeast
🍚 1/2 tablespoon sugar
🫒 1/2 cup oil
🌾 4 cups of flour
🥚 1 egg
🧂 1/2 tablespoon salt
For the Spinach and Cheese Filling:
🧄 1 clove garlic, minced
🧅 1 onion, finely chopped
🥬 1 bag of spinach, chopped
🧀 1 cup cheese (feta, mozzarella, or your choice)
🧂 Chicken seasoning, to taste
🌶️ Black pepper, to taste
For the Buffalo Chicken Filling:
🐓 2 chicken breasts, boiled and shredded
🌶️ 1/2 cup buffalo sauce
🥛 1/4 cup ranch dressing
🧀 1 cup cheese (e.g., Mexican blend or mozzarella)
Additional:
🥚 1 egg, for brushing
🌿 Sesame seeds, for topping
Instructions
1- Activate the Yeast:
- In a bowl, mix the warm milk, yeast, and sugar. Let it sit for about 5 minutes until the yeast is activated and frothy.
2- Prepare the Dough:
- In a mixer or a large bowl, combine the activated yeast mixture with oil, flour, egg, and salt.
- Knead the mixture until a smooth dough forms.
- Cover the dough with plastic wrap and a heavy towel, allowing it to rise for about 20-30 minutes until it doubles in size.
3- Make the Spinach and Cheese Filling:
- Heat some oil in a skillet over medium heat.
- Sauté the garlic and onion until translucent.
- Add the chopped spinach, chicken seasoning, and black pepper. Cook until the spinach wilts.
- Remove from heat and stir in the cheese. Mix well and set aside.
4- Make the Buffalo Chicken Filling:
- In a bowl, combine the shredded chicken with buffalo sauce, ranch dressing, and cheese. Mix thoroughly.
5- Prepare and Fill the Boreks:
- Preheat your oven to 375°F (190°C).
- Divide the risen dough into small balls. Roll each ball into a flat oval shape.
- Place some filling on one half of the oval, fold the dough over, and seal the edges to encase the filling.
- Use a pizza cutter or knife to make shallow strips on the surface.
6- Bake the Boreks:
- Place boreks on a baking tray lined with parchment paper.
- Brush the tops with beaten egg and sprinkle with sesame seeds.
- Bake for 20-25 minutes, or until golden brown.
