🍚 2 cups granulated sugar

🧀 8 oz cream cheese (room temperature)
🧈 4 tablespoons unsalted butter (softened)
🍊 2 tablespoons fresh orange juice
🍊 2 teaspoons orange zest
🥛 1/2 cup heavy whipping cream
🍚 6 cups powdered sugar

Instructions
1- Preheat & Prep:
- Preheat your oven to 350°F (175°C).
- Prepare two 9-inch round cake pans by spraying them with avocado oil and lining the bottoms with parchment paper.
2- Prepare Oranges:
- Wash the oranges thoroughly, then dry them with paper towels.
- Cut them into large chunks, removing any seeds.
3- Blend Wet Ingredients:
- In a blender, combine the orange pieces, vegetable oil, granulated sugar, eggs, and vanilla extract.
- Cover and blend until the mixture is smooth.
4- Mix Dry Ingredients:
- Add the flour, grated pistachios, baking powder, and salt to the blender.
- Blend just until all ingredients are combined and the batter is smooth.
5- Divide & Bake:
- Divide the batter evenly between the prepared cake pans.
- Tap the pans on the counter to release any trapped air bubbles.
- Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
6- Cooling:
- Allow the cakes to cool in the pans for 10 minutes.
- Then, remove them from the pans and let them cool completely on a wire rack.
