💧 1/2 cup water
🌿 1 cup parsley (chopped)
🍚 1 cup Orzo
🍚 2 cups basmati rice (washed and soaked)
🧂 1 tablespoon salt
💧 4 cups hot water
Instructions
1- Prepare Chicken Chilifry:
- Preheat a pan over medium to high heat.
- Add olive oil and sliced onion, cooking for a couple of minutes until the onion softens.
2- Cook Chicken:
- Add diced chicken, cooking for about 7 minutes until lightly browned.
- Incorporate garlic and bell pepper, sautéing for an additional few minutes.
3- Season and Simmer:
- Mix in sliced tomatoes and all seasonings (chicken bouillon, paprika, salt, cumin, black pepper, and cayenne pepper).
- Pour in the tomato sauce and water, stirring well.
4- Finish Chicken Chilifry:
- Cover the pan and let it simmer on medium to low heat for about 15 minutes.
- After simmering, turn off the heat and mix in chopped parsley. Set aside.
5- Prepare Orzo Rice Pilaf:
- Wash the rice until the water runs clear, then soak for 20 minutes before straining.
- On medium to high heat, toast the orzo in olive oil until golden.
6- Cook Rice:
- Mix in the strained rice and salt.
- Add hot water, stir, and cover. Allow the water to reduce.
7- Fluff the Rice:
- Once water is absorbed, reduce heat to low and let cook for another 15 to 20 minutes until the rice is fluffy.
- Fluff with a fork before serving.
