Ingredients
π 1 lemon (zest and juice)
π 500g chicken breast, cut into cubes
π§ 3 garlic cloves, minced
π₯ 1 teaspoon saffron threads
π§ 1 teaspoon salt
πΆοΈ 1/2 teaspoon black pepper
π« 2 tablespoons olive oil
π― 1 tablespoon honey
πΏ 2 tablespoons fresh parsley, chopped
Instructions
1- Prep the Marinade:
- In a small bowl, combine the juice and zest of one lemon, minced garlic, saffron threads, salt, and black pepper.
- Stir well to blend the flavors.
2- Marinate the Chicken:
- Place the cubed chicken in a large ziplock bag or bowl.
- Pour the saffron-lemon marinade over the chicken. Add olive oil and honey to the mix.
- Seal the bag or cover the bowl, shake well to ensure even coating, and refrigerate for at least 1 hour, or overnight for maximum flavor.
3- Skewer the Chicken:
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece to ensure even cooking.
4- Grill the Skewers:
- Preheat your grill or grill pan to medium-high heat.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
5- Garnish and Serve:
- Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
- Garnish with fresh parsley before serving.
