Ingredients
🌴 25 medjool dates
🌰 1/2 cup raw almonds
🌰 1/2 cup pecans or walnuts
🌰 1/2 cup pistachios
🍫 2 cups Ghirardelli milk or dark chocolate melting wafers
🧂 Sea salt flakes
Instructions
1- Dry Roast the Nuts:
- Heat a frying pan over medium heat.
- Add the almonds, pecans (or walnuts), and pistachios.
- Stir constantly for 3 to 4 minutes until they're lightly toasted and fragrant.
- Remove from the pan and allow them to cool.
2- Prep the Dates:
- Remove the pits from the medjool dates.
- Transfer them to a food processor and pulse until they are chopped and form a paste-like consistency.
3- Combine Dates and Nuts:
- Add the cooled nuts into the food processor with the date paste.
- Pulse until the nuts are coarsely chopped and fully incorporated with the dates.
- The mixture should be sticky and holds together when pressed.
4- Form the Truffles:
- Scoop 1 to 2 tablespoons of the mixture into your palm and tightly press it together.
- Roll it into a ball using the palm of your hands.
- Repeat with the remaining mixture.
5- Melt the Chocolate:
- Following the package instructions, melt the Ghirardelli chocolate wafers until smooth and pourable.
6- Coat the Truffles:
- Using a fork, dip each date and nut ball into the melted chocolate.
- Gently roll to ensure an even coat.
- Allow any excess chocolate to drip off before placing the truffle onto a parchment-lined dish.
7- Finish and Serve:
- After all truffles are coated, drizzle any remaining chocolate over the tops.
